Directions
- 1Add 1 and a half pounds of halved and quartered baby potatoes into a skillet with olive oil.
- 2Season the potatoes with salt.
- 3Add half a packet of taco seasoning on top of the potatoes.
- 4Cook the potatoes for about 7 minutes until they are a little crispy.
- 5Slide the crispy potatoes to the side of the skillet.
- 6Add 1 pound of lean ground beef to the skillet.
- 7Season the ground beef with salt and pepper.
- 8Cook the meat until it's browned.
- 9Add the other half of the taco seasoning on top of the cooked meat.
- 10Add one can of Ro-tel diced tomatoes and green chilies.
- 11Add about a third of a can of water on top.
- 12Mix everything well to combine.
- 13Cover and cook for about 10 to 15 minutes, stirring occasionally.
- 14Give everything one last stir.
- 15Add a light layer of shredded Colby Jack cheese on top.
- 16Cover for about 3 minutes, just long enough to melt the cheese.
- 17Serve a big portion into a bowl.
- 18Top with crushed red pepper and sour cream.
