Directions
- 1Pour enough enchilada sauce to cover the bottom of a 9x13 baking dish.
- 2Plop scoops of refried beans into the enchilada sauce, as many scoops as you have pieces of chicken.
- 3Put a piece of chicken on each pile of beans.
- 4Season the chicken generously with taco seasoning.
- 5Drop a block of softened cream cheese into a mixing bowl.
- 6Add a can of diced green chilies, a cup of shredded cheese, a quarter cup of enchilada sauce, and a tablespoon of taco seasoning to the bowl.
- 7Whisk the sauce mixture until beautifully combined.
- 8Plop a scoop of the cream cheese mixture on top of each piece of chicken.
- 9Spread the sauce mixture out on top of the chicken.
- 10Bake in the oven at 350 degrees Fahrenheit for about 30 minutes.
- 11Cover the casserole with shredded cheese when it comes out of the oven.
- 12Put it back in the oven for 5 to 10 minutes, until the cheese is melted and the chicken is cooked through.
- 13Sprinkle chopped green onions on top for garnish.
