Directions
- 1Add the bag of frozen diced potatoes to a baking dish.
- 2Add the cooked taco meat over the potatoes.
- 3Add the diced bell peppers.
- 4Add the corn.
- 5Top with salsa.
- 6Cover the dish with foil and bake at 400 degrees Fahrenheit.
- 7Remove the baking dish from the oven.
- 8Top the bake with shredded Mexican blend cheese and store-bought queso.
- 9Return the dish to the oven.

- 1 lb taco meat
- bell pepper, diced
- 1 bag corn
- black beans (optional)
- salsa
- mexican blend cheese, shredded
- queso, store bought

Tips
- You can add black beans if you want to.
- If you want to make your own queso you can do that but you don't have to.
- If you want it to be easier to smooth out and everything, you could heat the queso up beforehand and just drizzle it over the top.
