Ingredients: 1 block extra firm tofu; 0.25 cup cornstarch; 1 tsp salt; 1 tsp onion powder; 1 tsp garlic powder; 1 tsp paprika; 1 pinch cayenne; 2 cups cooked, rinsed, and dried rice; drizzle oil; salt; onion powder; garlic powder; paprika; 1 whole English cucumber; 1 medium red onion; 1 large carrot; 0.25 cup light mayo; 2 Tbsp hot sauce; 2 Tbsp maple syrup; to taste salt and pepper; lots toasted sesame seeds; crispy onions

Crispy Shaved Tofu Salad

Directions

1Shave 1 block of extra firm tofu.
2Mix the shaved tofu with 1/4 cup of cornstarch, 1 tsp each of salt, onion powder, garlic powder, paprika, and a pinch of cayenne.
3In a separate bowl, mix 2 cups of cooked, rinsed, and dried rice with a generous drizzle of oil, salt, onion powder, garlic powder, and paprika.
4On a greased pan (or two pans), spread out the rice and tofu in a thin even layer.
5Bake at 450F for 25-30 minutes until crispy.
6While the rice and tofu cook, shred one whole English cucumber, a medium red onion, and one large carrot.
7Press and drain out the liquid from the shredded vegetables.
8Mix together about 1/4 cup light mayo, and 2-3 Tbsp each of hot sauce and maple syrup.
9Add salt and pepper to taste to the dressing.
10Once cooked and cooled for a couple of minutes, toss together the sauce, veggie shreds, crispy rice, and tofu.
11Garnish with lots of toasted sesame seeds and crispy onions if you choose.
