Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.

Slice the jalapeños in half lengthwise and remove the seeds and membranes.

Place the jalapeño halves on the prepared baking tray and lightly brush with olive oil.

Fill each jalapeño with a cube of creamy brie.

Top with a few fresh blueberries and a small spoonful of blueberry preserves.

Sprinkle with chopped pecans and fresh thyme.

Season lightly with black pepper.

Bake until the brie is melted and bubbly and the jalapeños are just tender.

Remove from the oven and drizzle with honey while still warm.

Garnish with fresh parsley or thyme and serve immediately.

8 whole fresh jalapeño
6 oz brie cheese, rind removed and cut into small cubes
1/2 cup fresh blueberry
2 tbsp blueberry preserves (optional)
2 tbsp pecans or walnuts, chopped (optional)
1 tsp fresh thyme leaves
1 tbsp honey
1 tbsp olive oil
salt (optional)
freshly ground black pepper (optional)
fresh parsley or thyme, for garnish (optional)
